>For as long as I can remember, we always had lots of sweets at Christmas. My mom used to put out “hard candy” and “orange slices” in her milk glass candy dishes and always, I mean ALWAYS baked a fresh coconut cake at Christmas. She made the best cake. I haven’t had a really good piece of coconut cake since she passed away and every time I see one, I think of her.
In our house, we always make some type of candy. Divinity (humidity permitting), peppermint & bark, and most recently cake balls. A dear friend from the office shared the recipe with me. It is so simple, its hard for someone like me to mess up. Here goes:
Cake Balls
1 box cake mix – any flavor
1 tub icing – any flavor
1 brick of almond bark – white or dark
1 tub icing – any flavor
1 brick of almond bark – white or dark
Bake the cake per the boxes instructions and let cool completely
Crumble the cake into a large mixing bowl
Fold in the tub of icing
Mix well – Mixture will be thick, the consistency of cookie dough.
Using an small ice cream scoop or spoon, scoop out about a tablespoon of the mixture onto a tray covered with wax paper. Repeat until the tray is full.
Place in the freezer for a minimum of 3 hours. (my friend freezes overnight)
They need to be frozen hard to be able to dip them.
Melt dipping chocolate per package instructions
Remove frozen balls from freezer. (I do only 5-10 at a time, as they thaw quickly)
Using tooth picks or other dipping device, dip the balls into the dipping chocolate.
Shake off the excess. (This took some practice for me)
Place on a tray and allow to harden.

Incredibly rich, they are great with coffee and best shared with friends!
